Dense fabric and a sleeve. In winter a dress has to hold both warmth and shape — and the weight of the material gives you both.

Selection
A winter wedding usually happens indoors, but there is street between the registry office, the photographs and the restaurant. A mikado or heavy crepe dress with sleeves takes those dashes calmly; fine tulle does not.
Dense fabrics have another advantage that shows in photographs: they hold a line. Winter light is softer and flatter than summer light, and an architectural silhouette reads better in the frame than an airy one.
Plan the outer layer in advance — a cape, a wrap or a fur stole matching the dress. A puffer coat over a wedding gown ends up in every photograph of the transfer, and it is better if that shot is deliberate.
